The centralised kitchens of the Akshaya Patra Foundation cooks up 50,000 to 1 lakh meals per day with the help of automatic or semi-automatic equipment to ensure hygiene and efficiency in the cooking process.
Why do we need?
Automatic or semi-automatic kitchen equipment assists in:

Vessel used in The Akshaya Patra Foundation
Each morning, the staff at Akshaya Patra’s centralized kitchens pack fresh food into custom-built stainless steel insulated vessels; this is done to maintain freshness, hygiene, and temperature of the cooked meals.
WHY DO WE NEED IT?
- Greater heat retention. Thanks to the vessels, only 2 degrees of heat is lost per hour
- Exclusively designed to fit into Akshaya Patra food distribution vehicles
- Custom-built vessels ensure effective distribution
There is a requirement of a delivery vessel in Guwahati.

Vegetable cutting machine
This is an all-in-one multi-functional vegetable cutter that is used to slice, chop and dice all kinds of vegetables and greens. Generally, in a kitchen with 50,000 feeding capacity, a minimum of 3 tons vegetables get used on a daily basis.
- With the capacity to cut approximately 800 kilograms of vegetables per hour, this Vegetable Cutting Machine allows for bulk cutting and slicing of vegetables that is used in sambar and curries.
- It saves time and manpower when compared to manual vegetable cutting.
- It is compact, easy to operate, saves space, and also promotes hygienic method of cutting vegetables.
- The programmable control panel helps to adjust the sizes of the cut vegetables used for different menu items.

Wet Grinder
The Wet Grinder is used to make pastes from grains, coconut and lentils and is used for preparation of sambar, idly batter, curry leaves and so on.
- With a capacity of about 20-40 litres, this is a critical equipment in preparing sambar, chutney, and curries as part of the menu.
- It saves time and manpower.
- It is made of 304SS high quality stainless steel making it highly durable and corrosion resistant.
- It is compact, easy to operate, and requires less maintenance.
- The tilting system enables the drum to tilt and lock at 100 degree for easier and hygienic transfer of batter and pastes.

Potato peeler
The Potato Peeler is used for peeling root vegetables of large quantity in less time.
- This is a critical equipment in preparing a variety of menu items on a daily basis.
- It saves time and manpower.
- It is made up of high quality stainless steel drum and frame, and strong and fine emery bonding is applied on the rotating disk. This makes the peeler highly durable and corrosion resistant.
- It is compact, easy to operate, and requires less maintenance.
- It ensures minimal wastage of vegetables and water consumption is very low too.

Vehicles used in The Akshaya Patra Foundation
On each school day, the centralised kitchens of The Akshaya Patra Foundation cooks and delivers mid-day meals to more than 1.8 million children studying in Government schools. To maintain freshness and hygiene of the cooked meals, the Foundation has a fleet of dedicated and customised delivery vehicles.
WHY DO WE NEED IT?
- "ON TIME" delivery of meals to school children
- Honeycomb structure of vessel racks in the vehicles avoid spillage
- Use of insulated vessels in the vehicles, retains the temperature of meals
- Provision of two doors in vehicles eases the process of loading and unloading while also reducing the time
Different vehicles used in Akshaya Patra are Mahindra - Bolero, Max Pickup, Swaraj Mazda, TATA-Ace rack, TATA-Xenon, TATA-407, etc. There is a requirement of a delivery vehicle in Surat.
